Here's What You'll Need to Make COCONUT CURRY SHRIMP


  • 1 pound large shrimp, peeled and deveined

  • 1 tablespoon vegetable oil

  • 1 onion, finely chopped

  • 5 cloves garlic, minced

  • 1 tablespoon ginger, grated

  • 1 yellow bell pepper, sliced (add green and red of you'd like)

  • 1 can (13.5 oz) coconut milk

  • 2.5 tablespoons red curry paste

  • 1 tablespoon smoked paprika

  • 1 tablespoon brown sugar (optional)

  • Salt and Pepper (to taste)

  • 2 tablespoons lime juice

  • Fresh cilantro, for garnish

  • Thai Chili peppers (optional heat)

  • Cooked rice, for serving



HOW TO MAKE Coconut Curry Shrimp


  1. Instructions:

  2. Heat the vegetable oil in a large skillet or wok over medium heat. Add the chopped onion and cook until softened, about 2-3 minutes.

  3. Add the minced garlic and grated ginger to the skillet. Cook for another 1-2 minutes until fragrant.

  4. Stir in the sliced bell peppers and cook for 2-3 minutes until they begin to soften.

  5. Push the vegetables to one side of the skillet and add the shrimp. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.

  6. In a separate bowl, whisk together the coconut milk, red curry paste, brown sugar or honey, and lime juice until well combined.

  7. Pour the wet coconut milk mixture over the shrimp and vegetables in the skillet. Stir together well until the shrimp and vegetables are coated in the sauce.

  8. Bring the mixture to a simmer and let it cook for 2-3 minutes until heated through and the flavors have melded together.

  9. Taste the curry and adjust the seasoning with salt and pepper or additional spices as needed.

  10. Serve the coconut curry shrimp hot over cooked rice or noodles. Garnish with fresh cilantro leaves if desired.
