Here's What You'll Need

12 oz skinless salmon fillet (cut into 1 inch cubes)

10 pieces of Bacon, cut in half

salt, black pepper to taste

1 tbsp blackened seasoning

mesquite seasoning to taste

2 tbsp chopped parsley (optional)

2 tbsp olive oil

1 tbsp lemon juice

bbq Sauce (optional to glaze bacon)

++Sauce++

3 tbsp dijon mustard

3 tbsp honey

¼ tsp cayenne pepper

salt, black pepper to taste

Here's How You Make The Bacon, Salmon Bites

1. To make the sauce, combine all the ingredients in a bowl. Season to taste with salt and black pepper and refrigerate until ready to use.

2. Preheat oven to 400ºF.

3. In another bowl, mix together and season the salmon cubes with salt and black pepper to taste, blackened seasoning, olive oil, lemon juice and parsley (half). Mix together well so that all ingredients are absorbed into the salmon.

4. Sprinkle each piece of bacon with mesquite seasoning and wrap each salmon cube with a piece of bacon.

5. Place on a baking sheet lined with parchment paper or foil. Bake in preheated oven for 12-15 minutes.

6. Using a brush, glaze the outside of bacon with bbq sauce and return to oven and place on broil for 5 minutes to heat the sauce into the bacon. (optional)

7. Remove from the oven. Serve warm with the dijon honey mustard sauce.

TIPS | Things To Consider

Oven temperatures and times may vary. Depending whether you decide to use thin or thick cut bacon, this can alter your cook times. In this recipe I used hickory smoked thick cut bacon. I baked it about 20 mins and this did not over cook the salmon because the thickness of the bacon provided a barrier. Once the bacon is to your desired texture or crispiness, you can remove from oven. ENJOY! See video here on tiktok @MiguelGlobal
