How to Make Beef and Onion Stir Fry - Chinese American Cuisine Recipe

1. Velvet and marinate the beef. Slice the beef thinly against the grain. Add it to a bowl with the soy sauce, dark soy sauce, oyster sauce, sugar, baking soda and cornstarch. Mix thoroughly until every piece is coated. Add the 3 teaspoons of oil and sesame oil and mix again. Let the beef marinate for about 20–30 minutes.

2. Prepare the sauce. In a small bowl, combine the dark soy sauce, oyster sauce, Shaoxing cooking wine, water and a generous amount of freshly cracked black pepper. Set aside.

3. Sear the beef. Heat a wok or large skillet over high heat until very hot. Add about 2 tablespoons of the cooking oil. Add the beef in a single layer and allow it to sear briefly before stirring. Stir-fry for about 1–2 minutes, just until the exterior is browned. Don’t worry about cooking it completely through yet. Remove the beef from the pan and set aside.

4. Cook the onions. Add the remaining tablespoon of oil if needed. Add the sliced onion and stir-fry over high heat for about 1–2 minutes. Add the garlic, ¼ teaspoon salt and ¼ teaspoon sugar. Continue cooking until the onions begin to soften but still have some bite.

5. Bring everything together. Return the beef to the pan. Pour in the prepared sauce and toss everything together over high heat. Cook for another 1–2 minutes, allowing the sauce to reduce slightly and coat the beef and onions. Add the green onions during the final 30–60 seconds. Taste and add additional black pepper if desired.
