Sweet Heat BBQ Wings
From memories of my childhood to now in my adulthood, no matter what my diet entails, chicken wings are always a treat. This recipe for Calypso Heat Wings are a fusion of heat, savory barbecue sauce and a hint of spice. They are very easy to make with a swift kick of spicy sweet flavor and a treat for the entire family or on Game Day!! Here's What You'll Need
1 lb chicken wings (cut into sections)
Salt (season to taste)
Ground pepper (season to taste)
Cayenne pepper (season to taste)
Peanut oil or vegetable oil for frying
1 stalk green onion (diced)
WING SAUCE
1/2 cup of barbecue sauce
1/4 cup of hot sauce
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon pepper (adjust to taste)
1 teaspoon parsley
Here's How You Make it!
1. In a large bowl, combine barbecue sauce, hot sauce, 1/2 teaspoon of salt, 1/2 teaspoon of pepper and 1 teaspoon parsley. Mix together set aside.
2. Rinse wings under cold water then pat dry with paper towels. Spread out wings on a cutting board or baking sheet, and sprinkle both sides with salt, ground pepper and cayenne pepper.
3. In a large pot over medium heat, heat 3 inches oil until hot (about 350° F). Working in batches, fry chicken until deeply golden and cooked through (roughly 8 minutes).
4. Drain on a paper towel lined plate or bowl. Toss around wings in sauce and serve by topping off with a sprinkle of green diced onions.
TIPS
Green onion makes a great garnish and you can serve them with a side of celery if you like.
You can also bake the wings for a healthier choice. Coat with a little baking powder to make them crispy.
